Mentally I’ve given up on the week, but I do realize that you can’t just say you quit a week and just randomly wait for the new week to start lol. Kind of wish that was the way things worked. 😂 But luckily I didn’t give up in terms of making food. That’s been my stress relief recently. And tonight I made another late night bowl of veggies (roasted cauliflower and roasted kale tossed in a lemon tahini dressing) plus some baked tofu, and brown rice. Details are listed below. 🌱
Tofu: 1/4 block tofu diced then tossed in a mixture of 1 tbsp nutritional yeast, 1 tbsp soy sauce, 1/2 tsp gochujang (or 1 tsp hot sauce), 1/2 tsp garlic powder, 1-2 tbsp water. Place on baking sheet and place in oven for 15 minutes at 400F. ❤️
Cauliflower: Cut cauliflower into golf ball size pieces. Toss 1/2 cup of cauliflower in a mixture of 1 tbsp soy sauce, 1 tsp maple syrup, 1/2 tsp smoked paprika and 1/2 tsp curry powder. Place on baking sheet and bake at 400F for 15-20 minutes until tender. 🥣
Kale: Rinse Dino kale. Cut into bite size pieces and discard thicker portions of stems. Bake kale for 10mins at 400F. While that bakes mix together 1 tbsp tahini with juice of half a lemon and a little garlic powder. Take roasted kale and toss with dressing. 🌱
I literally baked everything on the same baking sheet. And just took each thing out when it was ready. I’ve spent the past week in Kolkata, in the midst of the largest celebrations I’ve witnessed anywhere, ever. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Durga Puja, is a festival tending towards a carnival that brings the whole city of over 4 million people onto the streets over a 9 day period to celebrate goddess Durga. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ No amount of reading, online videos or Instagram stories will prepare you for the frenzied energy and emotion that is Pujo. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ And as with all celebrations, there are several rituals around food.
What must and must not be consumed.
When, why and how it should be consumed. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ So when I stepped out for pandal hopping, my eyes were open. Looking for unique Pujo-specific foods.
However, most of the food served to the hungry millions was generic fare- puchkas, jhal-muri, ghugni, pakoras, cutlets, momos, noodles. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Undoubtedly delicious, but lacking substance. No rituals or tradition to be found amidst food peddled by temporary vendors. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
And then, we entered people’s homes. Families that had been celebrating Pujo for over a 100 years. There were grand Artis in large halls that once held larger families.
Nearly out-of-use chandeliers intertwined with customs.
Rusty grand columns rustling with rituals.
And poetry in food. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

🌟We Got the Beet🌟
Another recipe using vegetables from my organic basket (4) : Beet and Swiss Quinoa salad
A salad as beautiful as good!
And in addition it is very easy to achieve!
- 3 red beets (from my basket of organic and seasonal vegetables 4)
- 3 yellow beets (from my basket of organic and seasonal vegetables 4)
- 1 cup of quinoa IP-Suisse (@ipsuisse) 🇨🇭
- 1 apple
- chopped fresh parsley
- 2 tablespoons olive oil
- the juice of one lemon
Peel the beets and cut into large pieces. Then sprinkle with paprika and curcuma. Place in papillots and bake for an hour.
Meanwhile, rinse the quinoa and cook in a saucepan with water and a cube of vegetable broth for about 10 minutes. Rinse cooked quinoa in cold water and set aside. When the beets are cooked, cut into small cubes. In a large bowl, mix cold quinoa, diced beets, pieces of apple, parsley, oil and lemon juice. Refrigerate and serve cold. Can be kept for several days in the refrigerator.
