On our walking tour in Hue our guide recommended we try a local favourite, salt coffee! It doesn’t exactly sound like a good combination, but a few of us decided to give it a go. We had a little issue finding the cafe because even though our guide and Google said it was called “Salt Coffee” the signs out the front were all (not surprisingly) in Vietnamese, and it wasn’t until we translated that we found it. For less than a dollar you get a delicious, cold coffee that has a flavour not unlike salted caramel. Was telling my hubby the other day that I miss the porridge we used to get in nursery school - slap pap, matabela whatever you want to call it. Super creamy with butter and sugar and milk, I remember wanting to get to school early so I could devour a bowl or two before heading off to play... Those were the days 😁 So I had a look in the shops for a bag to make at home to relive my childhood but almost fell over looking at the carbs, I mean I knew it would be high but damn! 😂😅
Then @sugarfreesundays came to the rescue with her cauliflower oats post the other day - wow I thought, I've got to try that! So here's my adapted version, the combination is up to you but this was amazing, salted caramel and honey - what's not to love. So here's the recipe .
120g cauliflower (cauliflower rice would be best but I just chopped it finely)
35g oats (gluten free if you wish)
1 cup water
1 tsp cinnamon
1/2 tsp caramel essence (you can use vanilla extract/essence too)
Pinch salt (optional)
Put all the ingredients in a saucepan and bring to the boil. Place a lid on top turning down the heat and allow to simmer for about 8-10 minutes. Then if you used chopped cauliflower or the cauliflower rice is still very grainy, grab a stick blender and blend VERY well, you don't want any small chunks left in there to ruin the porridge facade okay 😉 top with whatever your heart desires - I used honey and @ohmega_nutbutters Salted Caramel Almond Butter and it was amazing! .
