Winter calls for some easy pea(sy) roast veggies! 
Firstly, one can never go wrong with roasted cauliflower at this time of year. Add in some silverbeet fresh from the garden (thank you Danni!) sautéed with tomato and mushrooms, and serve with some eye fillet and you have yourself a delicious combo with only about 30minutes of preparation time. Winning!

That's a good Meatball!! Made with Nomato Sauce and Daikon Noodles - AIP friendly and fibre packed!!
Tomato-less Sauce (AIP-friendly, Nightshade-free)
Makes 5 cups
Ingredients:
1 tablespoon coconut oil
2 yellow onions, chopped
4 garlic cloves, minced
1 pound carrots, chopped
1 medium beet, chopped
1 cup water
1 teaspoon sea salt
2 tablespoons fresh lemon juice
Directions:
Melt the coconut oil in a large pot over medium heat, and saute the onions until they are tender and golden, about 10 minutes. Add in the minced garlic and saute until fragrant, about 1 minute. Add in the carrots, beet, and water and bring the mixture to a boil. Cover and lower the heat to a simmer, cooking untill veggies are soft - 30 to 40 minutes. Transfer the mixture to a high-speed blender, add the salt and lemon juice, and blend until smooth. (Be sure to cover the vent in the lid of your blender with a dishtowel to prevent the top blowing off from the pressure of blending hot liquids!) Taste the sauce and adjust any seasonings, as needed, including a dash of oregano and basil, if you like! You can also add additional water, if you’d like a thinner sauce.

As I child, literally the only pasta I would eat was macaroni cheese. I wouldn’t eat bolognese, or anything with a tomato base πŸ™…πŸΌ‍♀️ nope it was all about the cheese for me. I think I drove my mum insane because of my single minded devotion to one type of pasta dish to the exclusion of all others - mac’n’cheese was honestly the dinner I would request if it was my choice to request a favourite πŸ˜‚ 
While my pasta tastes have expanded now, I’m still a big fan of the ultimate comfort food that is macaroni and cheese. With winter in full force, I felt like this week was an appropriate time to whip up a healthy version. This ‘cheesy sauce’ is packed with vegetables like cauliflower, carrot and pumpkin (hence the slightly alarming yellow colour) as well as a few handfuls of @anchorgostrong cheddar. I mixed the sauce up in #myvitamix and added some gluten free pasta from @goodforstore. It was then baked in the oven until the edges are crispy and cheese on top bubbled - totally nailing all my favourite aspects of the childhood classic - just with a few more vegetables.
