This delicious and super easy Deconstructed Souvlaki recipe is a great meal for weeknights, where you can get all the prep done early and just literally throw the chicken on the BBQ and you're done!
The chicken can easily be swapped for lamb if you're looking for a bit of variety.
The plain Greek yoghurt for the tzatziki is not only creamy and delicious but also has double the protein, half the carbs and half the sodium of regular yoghurt, whilst being jam packed with probiotics!
2x large chicken breast, thinly sliced into schnitzel sizes
Juice of 1 and a half lemons
3 tbsp dried oregano
2 cloves of garlic, crushed
1 red capsicum, halved, deseeded and roughly chopped
2x Lebanese cucumbers, 1 roughly chopped, 1 deseeded and finely chopped
2x tomatoes, roughly chopped
1x Spanish onion, chopped
200g kalamata olives
100g Greek feta, roughly crumbled
30ml white vinegar
1/2 bunch of fresh mint, finely chopped
200g Greek yoghurt
Salt and pepper, to taste
Combine 1/4 cup olive oil, salt and pepper, juice of 1 lemon, garlic and 2 tbsp of dried oregano in a shallow dish. Mix chicken through until it is coated and leave to marinate in the fridge for at least 1 hour.
To make the tzatziki, combine Greek yoghurt, juice of half a lemon, finely chopped mint and deseeded cucumber in a small bowl. Season with salt and set aside.
For the Greek salad, place tomato, capsicum, cucumber, Spanish onion, olives and feta in a bowl. Sprinkle with 1 tbsp of dried oregano. In a small bowl whisk together 1/4 cup olive oil, vinegar and a pinch of salt. Pour the dressing over the salad and toss well.
Heat either a large fry pan, or the BBQ to medium heat and cook chicken, in batches, until cooked through and slightly browned.
Serve the chicken with a side of Greek salad and a small dish of tzatziki. Enjoy!
