Plum Cake recipe from @gingerychefmila! 🌿😊

INGREDIENTS:
1 cup coconut flour
1 tbsp hemp seeds
1/2 cup oat flour
2 tbsp potato starch
2 tsp baking powder
1 tsp pink Himalayan salt
2 tbsp coconut cream
4 tbsp coconut oil (melted)
3 tbsp chia seeds (I used white chia)
1/2 cup water to soak chia seeds
3 plums - make a purée
1 tbsp plum powder  for richer taste (optional)
5 tbsp rice syrup or date syrup
1 tsp ground cinnamon
4-5 plums to place at the top of the cake
METHOD:
Simply mix all ingredients, grease the a baking dish with coconut oil before you pour the batter in.Slice plums and press into the batter, placing plum slices at the top.
Bake for 30 min at 185C
Make a toothpick test, just stick a toothpick into the center of your muffins, If there is wet batter still on the toothpick , it needs more time in the oven. Wednesday's are CRAZY! I'm up at 4:30 and on the road from SD to LA by 5:30. I spend most of the day driving between my 2 LA clients (traffic) and make it home around 5. Things are busy over here, I'll let you in on the secret soon, but that means I won't get the recipe for these up on the blog so I'm going to share the quick and easy recipe for these delicious and healthy bites here. Only 4 ingredients they are packed with whole food goodness and flavor, coconut blueberry! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Purple Pride Bites
Makes 12-15 balls
1 1/2c @sevensundaysmn Blueberry Chia Muesli
1/3c coconut butter (easy to make yourself with just shredded unsweetened coconut, see below)
2 TBSP local MN @barehoneymn honey
2 TBSP defrosted frozen blueberries, just berries not liquid
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Grind muesli in a food processor until you have a course flour texture, the blueberries may still be whole. Add in coconut butter and honey and process, while food processor is going slowly add the thawed frozen blueberries (minus the liquid or you may need to chill before rolling as they will be too sticky), blend until mixture comes together in a ball. Roll into balls and store in the refrigerator for 30 minutes or until ready to enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
To make your own coconut butter just blend an 8oz bag of unsweetened shredded coconut in a food processor or Vitamix, in a Vitamix it takes maybe 5 minutes, food processor a little longer. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I winged a #whole30 enchilada bake last night and it got👍🏻👍🏻. But the leftovers tasted out even better. Picture this: taco meat, sweet potatoes, poblanos, onions, cauli rice & sauce. Dumped in a pan and baked. Topped with this amazing Avocado cream (that I can’t take credit for) but hot damn. I just at 2 servings for lunch 🙈 Now I need a nap. •

Rainbow Salad for dinner the other night. 🌈 🌈. The seasame salmon nuggets were made in my @cooking_with_tefal_actifry, but if you don’t have one don’t fear: cube up a pound of salmon toss in one tablespoon each of honey, soy sauce, lemon juice, seasame seeds, 1/3 tsp of smoked paprika and a splash of seasame oil. Pan fry or Actifry for 9-10 min. Top romaine lettuce, tomatoes, red peppers, cucumbers, beets and avocado with the salmon bites. 😊 eu nunca gostei da pasta de amendoim comprada pronta, mas essa feita em casa, parece uma paçoquinha, é difícil parar de comer!!!

✅2 xic de amendoim
✅2 col chá óleo de coco (usei sem sabor!)
✅3 col chá xilitol
✅1 col café extrato de baunilha
.
Aqueça o amendoim no microondas, coloque de 40 em 40 segundos, mexendo, até ficar bem quente!!
.
Coloque em um processador e comece a bater em velocidade mínima
.
✔ dica: O amendoim quente libera óleos e chega no ponto de creme que queremos!
. 
Qdo perceber que já virou uma "farofa", acrescente os outros ingredientes
.
Deixe bater sem pressa!!
.
Qdo mais bater, mais cremoso fica, no final você pode aumentar a velocidade do processador
.
Conserve em um vidro vedado, e não precisa ficar na geladeira!!!
