As promised yesterday here is the recipe for desi style kebabs! Before I write the recipe down I want to make you guys aware that if you are making these kebabs the night before or a few hours prior to cooking them, then please DONT add the salt until last min just before cooking. Salt makes the mince and the onions release it’s natural juices which in turn makes the kebab mixture watery and this is what results in the kebabs not keeping shape, sticking to a seekh(skewer) and breaking/falling apart when cooking! Also, the colder the meat the better! (Can you tell I have learnt from my own experience 🙄)
This recipe is good for cooking on a BBQ or in the house. I personally don’t make kebabs in the oven as they dry out so cook them in a frying pan instead.
Also if you don’t like lamb then replace it with chicken mince but 2kg!
Lamb Kebabs (Desi style)
1.5kg Lamb mince.
1 medium sized onion.
1 large egg.
2-3 green bullet chillies.
2 cloves garlic.
2-3 inch piece ginger.
12-15 stems of coriander(more if you prefer).
2 1/2 tsp salt.
1 1/2 tsp black pepper.
2 tsp crushed red chilli flakes.
2 tsp coriander powder.
1 1/2 tsp cumin powder.
1 heaped tsp whole cumin seeds.
1 heaped tsp red chillie powder.
3 tbsp cooking oil.
•Place the mince in a large steel bowl if you have one- steel bowl will keep it more cold.
•Super finely chop up the onion and squeeze out as much of its juice as you can before adding it to the mince.
•Grind the green chillies, garlic and ginger together and add to the mince.
•Add all of the spices *remember if not making immoderately don’t add the salt!*.
•Finely chop the coriander and add to the mince along with the beaten up egg.
***Egg makes the mixture combine together more to prevent breakages.***
•Finally add the oil and then mix the mixture properly for a good few mins making sure all of the spices and ingredients have combined properly.
•You can now either shape them into round kebabs and cook as you make them or put them onto skewers and cook.
•If I make round in the house I cook them in a splash of oil in a large frying pan fitting 4-5 in one go or on a large griddle plate.
